The people at Nueske’s have been smoking bacon for 78 years, so they are no strangers to making a delicious product. But when the company decided to make a naturally cured bacon, it took almost five years to develop.
“We’re most famous for bacon. Applewood-smoked bacon put us on the map,” says Tanya Nueske, executive vice president for Nueske’s and granddaughter of R.C. Nueske, the company’s founder. “Whatever we came out with had to have the same standards as all our other products, and that took a while.”
Made from hand-trimmed pork bellies that are smoked for at least 24 hours, Wild Cherrywood Smoked Uncured Bacon is cured in filtered water, sea salt, raw sugar and celery juice. (“Uncured” means the meat hasn’t been cured in the traditional way using non-naturally occurring sodium nitrite or nitrate to preserve it.)
The company upped their social-media presence in 2010. Joining Facebook, the company realized a whole new way to interact with customers. “We get to hear great stories from our customers,” says Megan Dorsch, the company’s social-media maven. “And if they do have a complaint, they can use Facebook as an avenue to get help from us so we can remedy the problem.” —Deborah Moss
