Don’t let the name deceive you. Sullivan Harbor Farm Smokehouse’s expertise is in salmon, but it has found a way to jump on the bacon-loving bandwagon while staying true to its claim to fame. Dave’s Bacon is thinly sliced salmon cold-smoked in small batches and infused with maple syrup to achieve its savory, smoky quality.
The freshness of this product is a key part of its success. All salmon used in the company’s products comes from the Bay of Fundy off the coast of Maine and New Brunswick. “The salmon is less than 48 hours from the water when we receive it,” says Patricia Moore, director of operations at Sullivan Harbor Farm. Named for the man in charge of smoking all of the company’s products, Dave’s Bacon uses ocean-farm–raised salmon, shown in studies to be richest in omega 3s and lowest in mercury levels. The farm uses no artificial hormones or antibiotics and no artificial ingredients in the final product. Dave is also responsible for two-time sofi Silver Finalist (in 2010 and 2011) Omega Burst, ready-to-eat smoked salmon chunks in Maple Pepper and Cajun flavors.—Eva Meszaros
How to Enjoy It: Moore suggests serving Dave’s Bacon cold or pan-fried for a palate-pleasing bacon-like texture and enhanced smokiness. Swap out bacon or lox for a savory switch-up.
