The Seattle Cookie Counter transformed from a food truck to a brick-and-mortar shop, selling its unique variety of vegan ice cream sandwiches. Everything sold by the Cookie Counter is made in house, using organic and non-GMO ingredients whenever possible.
The cafe makes its vegan ice cream with a base of coconut milk and all-natural flavorings, and many of its ice cream flavors and baked goods are nut-free and soy-free as well.
