Seattle Vegan Ice Cream Truck Gets a Permanent Home

The Seattle Cookie Counter transformed from a food truck to a brick-and-mortar shop, selling its unique variety of vegan ice cream sandwiches. Flavors include Lavender, Birthday Cake and Fluffernutter, along with baked goods ranging from cookies to pop tarts to cakes. Everything sold by the Cookie Counter is made in house, using organic and non-GMO ingredients whenever possible.

The cafe makes its vegan ice cream with a base of coconut milk and all-natural flavorings, and many of its ice cream flavors and baked goods are nut-free and soy-free as well. It also offers sundaes such as Call the Dentist, which features vanilla ice cream with caramel sauce, peanut butter magic shell, Chick-O-Stick, whipped coconut cream and a cherry, reports Go Dairy FreeFull Story
